Rich Moist Chocolate Brownies Recipe

 

Ingredients:


2/3 cups vegetable oil (you may want to use melted unsalted butter for a more fragrant flavor. Melt butter on double boiler or simply put it in microwave about 1min approx)

1-1½ cups of sugar (i used 1.5 cups for this first time, but I think I will reduce to using 1 cup in future, but simply because my grandma is diabetic. 1.5 cups is fine^^)
 

4 eggs
 
1½ cap of vanilla essence

¾ cups of unsweetened cocoa powder
 
2/3 cups of flour
 
1 tsp baking powder
 
1 tbsp coffee powder + hot water (just abit of water enough to melt all coffee powder)
 
Chocolate Chips...nuts...mini marshmallows...m&ms... (anything you like in your brownies!^^)
 


Baking Time!

1.  Mix sugar with vegetable oil. (if you are using unsweetened butter, you may want to melt it till it looks like vegetable oil but COOL it before mixing in sugar. Another option will be to CREAM the butter with sugar till its fluffy, just like the pineapple tarts pastry in previous post)




2.  Beat in the eggs, one by one please. (and, this is 2nd reason why you need cool your melted butter before working with it, cos it will cook your egg if its too hot)




3.  Stir in the vanilla essence:)


4.  Mix coffee powder until melted in hot water and stir into the mixture. (coffee enhances the taste of chocolate, so anything with chocolate, you may want to add some coffee in. Espresso powder will be even better but haha I'm going for budget)


5.  In another bowl, mix the dry ingredients(plain flour, cocoa powder, baking powder)




6.  Sift in the dry ingredients bit by bit and mix throughly



7. Preheat oven at 180 degreesC (I like preheating oven during later steps cos I'm slow, cant possibly let oven cool, oven should be preheated and hot when the cake batter goes into it)


8.  Coat baking pan with butter and lightly flour the surface of the pan.



9. Pour batter carefully into floured cake pan. Sprinkle what ever you like onto the top! (own preference, you may want to mix them in instead of just putting on top. Try not to have batter on the side of pan, will chaoda...so pour batter in carefully)


10. Into the oven! Approx 35-40mins depending n different oven (AND SIZE OF YOUR PAN. If pan is bigger than my 5x8, your brownie will be thinner, so no need too long to bake. If pan is smaller, brownie will be thicker and need longer time)

Check the brownie when the oven dings :)

 

I use a metal chopstick simply because its long enough compared to a toothpick, which puts your hand in danger when you check your brownies when its still in oven (do check the brownie when its still in oven to save the trouble of taking the pan out and putting it back in if its still not done) by poking centre of it with chopstick. It should come out relatively clean:)

oops almost forgot, after taking the yummy thing out of the oven, turn it over onto cooling rack to cool before cutting it. You may like to trim the sides firstly make it look nice nice, secondly, the crispy bits are yumm... :P
